Cedar Planked Salmon

Ingredients:

(2) 6 oz portions of New Zealand King Salmon*
1 large Cedar grilling plank*
Lemon wheels
Dill Sprigs
Salt and pepper

Instructions:

  • Soak cedar plank in water for one hour.

  • Set-up grill for Med-High indirect heat. Preheat.

  • Season salmon with salt and pepper, or other seasoning of your choice.

  • Place the plank on the grill for 3-4 minutes until there is a smell of smoke.

  • Flip the plank and place the salmon on top, skin side down.

  • Cover the grill and cook for approximately 10-20 minutes, depending on the thickness of your salmon.

  • Top with dill and lemon for the last 10 minutes of cooking.

  • If the edges of the plank catch fire, just mist with water in a spray bottle or move the plank to a cooler part of the grill.

  • Internal temperature should read 125°F for medium.

  • Transfer plank to platter and serve.

  • Try a paired with sautéed spinach and roasted potatoes
